I am so excited about this dish. One of the most amazing preparations that I had was this betki maach
- Bhetki Fish ( Preferably Fillet)
- Mustard Paste
- Salt
- Ginger Garlic Paste
- Green Chilly Paste
- Turmeric Powder
- Mustard oil
- Plantain Leaf ( Banana Leaf)
Cooking procedure:
Take fishpieces ( preferably fillets)
Marinate with turmeric powder and salt
Make a paste of mustard powder, mustard oil, ginger garlic paste and green chilly
Remove the thin rib from the centre of the plantain leaf and put it in the frying pan
Wrap the fish with the paste in the plantain leaf and cover it with another plantain leaf .Place the lid.Cook it in low flame for 15 mins. Remove the lid . Place a plate on top of the pan, and turn the pan upside down. Do it fast , so that the semi steamed fish gets transferred to the plate upside down. Hence there is one leaf on top of the fish, and another at the bottom. The top burnt leaf needs to be removed and place a fresh plantain leaf on the pan. Put the fish back to the pan. Cook under closed lid in low flame for about 15 mins.
Preparation is raedy
